Four Plant-Based Fall Recipes We Love


One of our favorite parts about fall is all the fall flavors involved in cooking and baking. We rounded up four plant-based fall recipes by some of our favorite Instagram creators - Apple Pie Overnight Oats, Chai Banana Bread Muffins, Autumn Chopped Salad, and Pumpkin Peanut Butter Bites. All we can say is YUM. See below for all the goodness!

 

Chai Banana Bread Muffins by @gabbacado

Ingredients

2 cups oat flour⁣
3/4 tsp baking soda⁣
1/2 tsp baking powder
3/4 tsp salt⁣⁣
2 tsp loose leaf chai tea (grind it) OR 2 tsp ground cardamom, 1/2 tsp cloves, and 1 tsp nutmeg
2 tsp cinnamon
1 cup mashed banana⁣
1/2 cup pure maple syrup⁣
1/3 cup unsweetened applesauce ⁣
1/4 cup plant milk⁣
2 tsp vanilla extract⁣

Directions

  1. Preheat oven to 350 degrees Fahrenheit ⁣
  2. Mix dry ingredients in a medium bowl until well combined⁣
  3. Add in wet ingredients and ix until fully combined
  4. Pour batter into muffin tins and bake for 20-25 min

Autumn Chopped Salad by @naturallybeingnat

Ingredients

Autumn Chopped Salad:

8 cups mixed greens
1 cup shaved brussels sprouts
1 15oz. can chickpeas rinsed and drained
1/3 cup dried cranberries
1/3 cup pecan halves
1 apple chopped

Sriracha Apple Cider Tahini Dressing:

1/3 cup tahini
1/3 cup apple cider vinegar
1-2 tsp siracha depending on spice desire
5 tbsp water
salt to taste

Directions

Autumn Chopped Salad:

  1. Start by rinsing your greens, brussels sprouts and apple. Chop the apple and add all ingredients into a large mixing bowl
  2. Rinse and drain your chickpeas. Dry with a paper towel or dish towel and add to the salad bowl
  3. Add remaining ingredients. Mix together and add dressing when ready to eat!

Sriracha Apple Cider Tahini Dressing:

  1. Whisk together all ingredients except for water
  2. Once mixture is combined, add in water one tablespoon at a time until desired dressing consistency is met. For this recipe, I used 3 tablespoons in total
  3. Pour over dish and store remaining (if any) in a sealable jar or container in the fridge for up to 10 days.

Apple Pie Overnight Oats by @natsneatteats

Ingredients

1/2 cup rolled oats
1 scoop chocolate protein
1 tbsp peanut butter
1/3 cup greek or dairy-free yogurt
1 tbsp cinnamon
1 tbsp pumpkin spice
1 tbsp chia seeds
2 tbsp maple syrup
1 cup almond or oat milk

Directions

  1. In a small jar, combine all ingredients
  2. Mix well and leave in the fridge overnight
  3. Enjoy the next morning and top with cut up apples & cinnamon

Pumpkin Peanut Butter Bites by @hannahharvestinghealth

Ingredients

1 cup chocolate gems
1/4 cup pumpkin purée
1/3 cup peanut butter
3 tbsp coconut sugar

Directions

1. Line a muffin tin (makes 6)
2. In a small bowl, stir together the pumpkin purée, peanut butter, & coconut sugar.
3. Melt the chocolate & pour a small amount into the lined muffin tin.
4. Scoop the pumpkin filling over the chocolate, top with more melted chocolate, and a sprinkle of salt on each.
5. Store in the fridge for at least an hour to let them set & enjoy!
