3 Festive Foods for Halloween

Although things will look a bit different this Halloween, we’re still planning on making the most of things. One way we’re working on keeping things special is through festive foods kids and adults will love. Fork and Beans is our go-to source of holiday inspiration, sharing recipes & plating ideas for both healthy and delicious eats that are guaranteed to get you in the Halloween mood.

Vegan Gummy Worms via Fork and Beans

Ingredients

For purple worms:

  • 1/2 c. blueberries, fresh or frozen
  • 3/4 c. Juicy Juice 100% Juice, apple flavor
  • 1/2 tsp. blueberry flavoring oil (optional)
  • 1 1/2 Tbsp. agar powder

For orange worms:

  • 1 small orange, peeled
  • 3/4 c. Juicy Juice 100% Juice, Orange Tangerine flavor
  • 1/2 tsp. blood orange flavoring oil (optional)
  • 1 1/2 Tbsp. agar powder

For yellow worms:

  • 3/4 c. Juicy Juice 100% Juice, apple flavor
  • few drops all natural yellow coloring
  • 1/2 tsp. lemon flavoring oil (optional)
  • 1 1/2 Tbsp. agar powder

For green worms:

  • 1 c. spinach, fresh
  • 3/4 c. Juicy Juice 100% Juice, apple flavor
  • 1–2 Tbsp. maple syrup (optional)
  • 1/2 tsp. apple flavoring oil (optional)
  • 1 1/2 Tbsp. agar powder

Instructions

  1. For the purple and green colors, place the blueberries or spinach into a pan with the apple juice and bring to a simmer over medium heat for 5 minutes until the juice has turned either purple or green. Remove the fruit/spinach from the pan, making sure you keep the liquid intact.
  2. If you are making the orange colored worms, blend together the peeled orange and the Tangerine Orange juice until smooth. Place into a saucepan and bring to a boil.
  3. Do a quick taste test. If you want you can add 1-2 Tbsp. maple syrup depending on your tastebuds. Also stir in the flavoring oil.
  4. At this point for all colors, stir in the agar powder and reduce to a simmer for 2 minutes. The agar should be completely dissolved by now. Whisk constantly.
  5. Remove from heat our into desired molds with a syringe* (I found a gummy worm mold that came with the syringe on Amazon).
  6. Refrigerate until sets, approximately 10 minutes.
  7. Keep chilled in the fridge for up to 1 week in an airtight container.

 

Silly Apple Bites via Fork and Beans

*serves 8

Ingredients

  • 2 green apples, each quartered
  • sunflower butter
  • 32 sunflower seeds
  • 2–3 strawberries, sliced
  • 1–2 homemade googly eyes per apple bite

Instructions

  1. Cut the middles out of each quarter of the apple to create a mouth. Don’t worry about perfection, you are filling this gap with sun butter anyway so if you cut too deep, you can always just cover it up and no one will know.
  2. Coat the inside of the cut gap with a filling of sunflower butter.
  3. Place 4 sunflower seeds on the top of the “mouth” for the teeth.
  4. Place 1 sliced strawberry inside the mouth for the tongue.
  5. “Glue” each eye above the mouth with a dab of sun butter to stick.
  6. Serve with a smile.

 

Frankenstein Brown Rice Krispie Treats via Fork and Beans

*serves 6

Ingredients

For the rice krispies:

  • 1 Tbsp. vegan butter
  • 2 c. vegan marshmallows
  • 4 c. organic brown rice cereal
  • 5 drops natural green coloring

For the hair/month:

  • 1/2 c. nondairy chocolate, melted + 1 Tbsp. coconut oil or shortening to smooth out
  • chocolate sprinkles

For the eyes:

For the neck bolts:

  • 6 vegan marshmallows, cut in half

Other ingredients:

  • 6 popsicle sticks

Instructions

  1. Line an 8×8 pan with wax paper.
  2. In a medium saucepan, melt the vegan butter and vegan marshmallows on medium/low heat, stirring often.
  3. Once they are completely melted, remove from the heat and add the natural food coloring until
  4. well-combined. Add the brown rice cereal.
  5. Place in the 8×8 pan and pat down gently. Allow to cool down for 10 minutes. Cut into 6 rectangles. Place a popsicle stick into each Treat.
  6. Coat the tops of the treats with melted chocolate and sprinkles.
  7. “Glue” the homemade googly eyes with melted chocolate for the eyes and the marshmallows for the bolts. Draw the mouths with more melted chocolate. Allow to set.
